That's where cheese papers come in. These special two-ply cheese papers maintain proper humidity and allow adequate oxygen exchange to keep cheese alive and tasty. In fact, this combination of moisture and oxygen control simulates the cheese cave environment where cheese are aged. These papers can make all the difference between good cheese and bad cheese.
