The Griddler has two cooking surfaces, top and bottom, with two rotary dial controls on the front of the brushed stainless steel housing that make following recipes easier. The Griddle dial on the left is marked in degrees, from 200F to 425F. The Grill/Panini knob controls temperatures from Low (150F) to Sear (450). On top of that, the Griddler comes with two sets of cooking plates, the ribbed grill plates shown and flat griddle plates. Both sets are non-stick for easy clean up and pop in and out at the touch of a button.
What this means is that you cook pancakes on the bottom of the Griddler with the griddle plates in place. Or turn out hamburgers using the grill plate. Or you can open up the Griddler, lay the top flat and double your cooking surface with either type of plates in place.
