Banana Cream Pie

MAKE THIS WITH: USA Pans 9" Pie Pan

 

Ingredients:

  • 1/2 cup + 2 tablespoon granulated sugar

  • 1/4 cup cornstarch

  • 1/8 teaspoon salt

  • 1/2 cup evaporated milk

  • 5 large egg yolks

  • 2 cups whole milk

  • 1/2 teaspoon vanilla extract

  • 2 tablespoon unsalted butter

  • 1 fully baked and cooled pie crust- your favorite recipe or you could even use a refrigerated one here!

  • 2 sliced bananas + more for garnish

Whipped Cream:

  • 1 cup heavy cream- cold

  • 2 tablesoon confectioners' sugar

  • 1/2 teaspoon vanilla extract

Directions:

  1. Whisk together in a medium saucepan: sugar, cornstarch, and salt. Whisk in the evaporated milk, milk, and egg yolks. Whisk until smooth.

  2. Bring mixture to a simmer. Whisking continuously. Once the mixture thickens and becomes smooth, remove from heat.

  3. Add the butter and vanilla extract and stir. Stir the mixture for several minutes until no longer hot. It should be warm.

  4. Pour 1/2 filling into baked and cool pie crust. Top with 2 sliced bananas and the rest of the filling on top.

  5. Place a piece of plastic wrap directly onto the filling to prevent a skin and refrigerate until cool- about 4 hours.

  6. Once cooled, top with your favorite whipped cream and garnish with bananas. Beat whipped cream ingredients together on high until soft peaks form.
