Marry Me Chicken

Ingredients:

  • 1 package skinless chicken breast tenderloins

  • Salt and pepper to taste

  • 2 tablespoons Cobram Estate Olive Oil

  • 1 teaspoon fresh basil, chopped

  • 1 teaspoon fresh oregano, chopped

  • 1 teaspoon fresh rosemary, chopped

  • 2 cloves garlic, chopped

  • ½ cup sun-dried tomatoes, chopped

  • 1 cup chicken broth

  • ½ cup heavy cream

  • ⅓ cup grated Parmesan cheese

  • Fresh parsley for garnish

Directions:

  1. Season both sides of the chicken breasts with salt and pepper.

  2. Heat olive oil in a saute pan over medium-high heat. Sear the chicken until golden brown on both sides, about 5-6 minutes per side. Remove chicken from the skillet and set aside.

  3. In the same pan add dried basil, oregano, rosemary, garlic and sun-dried tomatoes. Stir and cook for 1-2 minutes.

  4. Pour in chicken broth and scrape any browned bits from the bottom of the skillet. Allow it to simmer for 5 minutes.

  5. Reduce heat to medium-low, pour in heavy cream, and stir to combine. Add Parmesan cheese and return the chicken to the skillet.

  6. Simmer gently for 10-12 minutes, or until the chicken is cooked through and the sauce has thickened.
